  1. In an electric skillet, heat canola oil to 375°f. If you do not have an electric skillet, a cast iron or heavy bottomed large deep skillet works as well.
  2. While your oil is heating, in a large bowl or paper sack mix together the dredge ingredients.
  3. Dredge the chicken pieces 3 at a time in the flour mixture and pat/shake of excess flour. Set aside on a baking rack/sheet until all pieces have been coated.
  4. Carefully add the chicken pieces to the skillet by gently nestling them in evenly spaced.
  5. Let brown lightly on first side ( 5-8 mins) before turning or moving the chicken. Once turned on the second side leave to cook 5 minutes as well. .

  7. Remove chicken from skillet and place on a drying rack or a plate, lined with paper towels or a brown paper sack. We serve with country sides like mash potatoes with gravy, corn, and greens.
